The MadLab is the story of a passionate person. Cyril has had as many lives as there are varieties of original products created in his workshop in Laeken. This road, full of rich encounters, began when he lost his job as a mining geologist in Australia. ???
He then decided to join the Paris Academy in the pastry section and found himself stuck between a passion for taste and a taste for passion.
Freshly graduated, he continues to learn pastry making in different Parisian institutions. An opportunity will then take him to Brussels to pursue his professional career.
At the beginning of 2015, driven by his desire and a certain vision of food, he is experimenting with original combinations of noble and raw materials. The result? Unbridled biscuits and crackers with a strong presence of aromatic plants. A mixture of crunchy and shortbread, sweet and spicy, spicy and round.
By chance of an encounter, he crossed paths with David, himself passionate about healthy food. The latter is directly seduced by Cyril’s innovative and unbridled approach. Our colleagues agree on the philosophy of MAD LAB. The use of noble materials such as brewers’ grains, a commitment to circular economy and a dedication to healthy values. ?Chacun in turn turns out to be the MAD or the LAB, in a delicious whirlwind of crazy adventures.
